Ancient emmer is one of the oldest grains in the world. It has been cultivated for 10,000 years - until today. However, when high-yielding varieties of grain were discovered, Emer was driven from the field, which is now gradually changing again.
What is the ancient grain group?
Emmer, also known as double grain, is one of the world's oldest cultivated grains, along with einkorn, spelt, and kamut. It is called two grains because it contains two grains per cub. The texture of emmer flour is coarse and semolina-like. The grains are also available in whole grain, flake or meal form at organic markets and health food stores. Color can also vary. There are white, red and black varieties, with particular resistance to the latter.
Emer - strong grain
While emmer was previously grown in the Middle East, it is now finding its way back into local fields. The main reasons for this are changes in society and the need for a healthier diet and more sustainable agriculture.
It grows and thrives in nutrient poor and dry soil and does not require any pesticides. The so-called naturally hulled grains have a hard shell that protects them from pests, fungi and negative environmental influences and makes them more resistant. This means that the grains have a longer shelf life.
However, the grain is low-yielding, with one hectare producing only about 2 to 4 tons of emmer. The wheat volume is about eight tons of grain per hectare. In addition, the peel must be removed from the emmer. This makes processing more complicated and ultimately the purchase price more expensive.
How healthy is Emer?
Ancient grains contain many valuable nutrients, including many minerals and plenty of protein. This also makes it healthier than wheat.

Cooking and baking - use emmer
Since the taste of the grain is spicy, aromatic and nutty, it is suitable for cooking and baking. Bread and pastries acquire a dark color and spicy aroma. There are also noodles made from emmer. It is also suitable as a side dish for soups, casseroles or salads, as well as as a substitute for rice.
